I've seen lots of interpretations for this movie, now, I'm no expert but this is what I gathered from this beautiful movie: I believe this movie is essentially about the human condition, each character represents their role perfectly. First we have the three characters involved in the crime: The wife, the samurai and the husband. All of them tell their part of the story in a version that portrays them in a good light while demonising the rest (with the exception of the bandits recollection of the battle in which he portrayed them both as epic warriors like in a harakiri style duel, meanwhile the woodcutter vividly recalls both of them barely fighting because of the fear they felt, this may well be because the bandit doesn't remember it too well just because of how scared he was, proving the unreliability of our memories.) This is all done in order to try and save the honour of the all of them, the dishonoured woman (even though she was raped this WAS the mentality during Sengoku Japan and the rest of the world) the cowardly samurai that had begged for his life and the embarrassed bandit that had been on his knees begging the woman to marry him. Then we have the other three characters, the woodcutter, the priest and the peasant. I believe they a actually make up a spectrum of the different ways a human can be, and only one of them, the woodcutter, is truly real. The Priest represents the ideal human, good, kind hearted, however horrified at being exposed to the brutality and coldness of the modern world. The peasant represents pure self-interest, he only cares about himself, and if he has to screw others along the way we'll that's too bad. And finally the woodcutter, he represents the duality of man, our ability to be both the priest AND the peasant. He is the self interested peasant when he steals the expensive dagger, and he is the kind hearted priest when he adopts the abandoned child. All in all, there's two main messages I got from this movie: people and their memories often lie (like how the bandits memory betrayed him about the duel and how each of them lied in their stories) and we all do bad deeds, but it's up to us in order to try and spread love and kindness into the world, no matter how hard it may be.
